The Gourmet Mama

This extremely easy dish is so packed with flavor that no one will ever realize that you did virtually nothing to achieve it. It is the ideal Gourmet Mama meal. To bring the chicken into the world of one dish wonders, I’ve added a bunch of veggies which could easily be substituted for other types, such as peas, potatoes, leeks, etc. Everything is wonderfully flavored with beer.

Slow Cooker Beer Chicken

serves 4

4-6 chicken legs
2 carrots, sliced
2 onions, chopped
2 c. corn
1 can of beer (about 1.5 c.)
1/2 c. chicken broth

Place chicken in the slow cooker, dump veggies on top and pour in the beer and broth.

Cook on high for 4-6 hours and serve hot. This goes very well over rice.
