Chocolate Orange Muffins

Muffins make awesome breakfast food and snacks because you can make them ahead of time. These particular muffins blend two classic flavors, orange and chocolate, for a decadent breakfast that is better for you than any sugary cereal. Plus, kids love them.

Whip up a double batch of these Chocolate Orange Muffins and you will be able to freeze half for a later date. They thaw out nicely in the microwave and make excellent on-the-go breakfasts.

Chocolate Orange Muffins

Makes 1 dozen

1/2 c. butter, melted
2 eggs
1/2 c. milk
1/2 c. orange juice
1 tsp. orange extract
1 2/3 c. flour
3/4 c. sugar
1/3 c. cocoa powder
1 Tblsp. baking powder

Preheat the oven to 350°.

Mix dry ingredients in one bowl. In another, beat the eggs and sugar with the milk and orange juice. Add butter and orange extract, stirring well.

Pour wet ingredients into dry and beat just enough to mix. Fill 12 muffin cups halfway with the batter and bake for 15-20 min. or until a toothpick inserted in the middle comes out clean.

    Hi,
    I just made these muffins and noticed you didn’t have an amount listed for sugar. I went ahead and used 1/2 cup sucanat…they are a little sweet but won’t satisfy a strong sweet tooth. I also used orange zest in place of the extract and added a 1/4 cup mini chocolate chips. They got a thumbs up from my kids…thanks for a yummy recipe to work with!
