Cherry Flummery

Lately, I’ve been fascinated with old recipes. You can find a lot of them online and while many older recipes are high in fat and other unhealthy things (but they taste so good!), this one is actually not that bad for you. Flummery is also known as Jello whip and is made with just two ingredients. It also sets up pretty fast and is the perfect melt-in-your mouth dessert for those times when you’re running low on supplies.

My kids, as it turned out, love flummery and have been asking for it every day since I first made it. Which is why I’m going to be whipping up another batch today. Care to join me?

Cherry Flummery

serves 8

2 boxes cherry Jello
2 c. boiling water
1 can Carnation Evaporated Milk

Put the evaporated milk in the freezer for an hour or so to chill. Alternatively, place in the fridge overnight.

Stir the boiling water into the Jello powder, stirring until completely dissolved. Put in the fridge to cool, but DON’T let it set. Stir it every so often to check.

Pour the chilled milk into a metal mixing bowl and beat on high until it forms soft peaks. (this will act pretty much like whipping cream) Be aware that your little can of milk will turn into about five times the amount of whipped milk, so use a big bowl!

Now, continue to beat on high while slowly pouring the cooled Jello into the whipped milk. Continue to beat until uniform in color . . . you might need to scrape down the sides with a spatula a couple of times to achieve this.

At this point, you can put the flummery into Jello molds if you have them, or a cake mold, or do what I did and simply leave it in the bowl. Put in the fridge to chill for a couple of hours and serve. It will be frothy looking and melt sweetly in your mouth . . . the perfect easy dessert.
