Yummy Fresh Banana Bread

Banana bread has always been a favorite in my family. As children, we rarely got to eat bananas, so the rich, steaming bread full of delicious banana flavor was something that we only got to try once or twice a year.

These days, I live in a tropical country where bananas literally grow outside my kitchen window! Needless to say, banana bread has become something we do quite often around here. I even made it to sell for a while when my oldest son was a baby.

Originally, I used the recipe in The Joy of Cooking, a cookbook that I highly recommend (unfortunately my English copy was destroyed by mice and mold!) if you want to learn the basics of cooking. This recipe, however, is one I found over at Simply Recipes, but slightly altered.

Yummy Banana Bread

makes 2 loaves

6 ripe bananas
2/3 c. melted butter
1 1/2 c. sugar
2 eggs
2 tsp. vanilla
1 pinch salt
2 tsp. baking powder
3 c. flour

Preheat oven to 350ยบ. Grease two loaf pans.

In a bowl, mash the bananas with a fork. Mix in melted butter, vanilla and eggs.

In a separate bowl, mix sugar, salt, flour and baking powder. Add to the banana mixture and stir until thoroughly mixed. Pour into loaf pans and bake for 45-60 min. or until a toothpick stuck in the middle comes out clean.

Serve hot or cold. This makes a great homewarming gift!
