While here in Guatemala it´s the rainy season, Cherith has been complaining about the heat back up in Canada, so I thought we should probably start featuring some yummy recipes that go well with the summer heat. If you have a favorite way to chill out with food, be sure to leave a comment!

Homemade popsicles are the best way to cool down without spending too much cash and there are several recipes here to keep you busy. I love to make popsicles for the boys and just keep some on hand in the fridge. It sure beats the chemically expensive ones at the shop. . . I guess we need to do a post on that soon, too!

With the summer heat come delicious fresh veggies. If you are tired of the usual recipes, then you might like this tasty version of cauliflower, done very simply, but very deliciously.

Another unique and very lovely recipe is this Citrus & Roasted Pepper Salad with Balsamic Vinegrette . . . really neat combination and it gives you another excuse to use the roasted pepper recipe I just posted.

Bean Salad is a hearty Mexican salad that I really love to make. Everyone has their own version adn this one looks particularly tasty! Or, if you prefer something more American in style, a good old fashioned potato salad is just the thing.

And of course, this summery list wouldn´t be complete without an ice cream recipe! Why not beat the heat with a super tasty Mango Ice Cream recipe?
