Vegetarian Lentil Burgers

It’s not often you find a truly delicious veggie burger, but these lentil burgers are great! You can use them like an actual burger patty in a bun with all the fixings or just eat them plain. We tried them with pita bread and white bean dip.

They might not look pretty, but these lentil burgers have the flavor to make up for it. I got the inspiration from this recipe, but when I mixed it up, it was tremendously goopy (I’m thinking my bread crumbs weren’t right) and so I ended up altering it quite a bit. Here is the new and improved version.

Vegetarian Lentil Burgers
Makes 2 dozen 5″ patties

3 c. cooked lentils (to cook, cover with water, boil and simmer for 15-20 min.)
1 onion, minced
1 T. oil
1 c. oatmeal
4 eggs
1/2 – 1 c. flour
1 tsp. dried oregano
1 T. fresh parsley, chopped
1/4 tsp. garlic powder
salt

Mix all ingredients except flour in a large bowl. Let sit for ten minutes so the oatmeal can soak up liquid. Add flour gradually, stirring until you have a dough the consistency of pancake batter.

Heat a little oil in a frying pan over medium heat until a drop of water in the pan sizzles. Spoon the lentil mixture into the pan, using your spoon to flatten it out a little. Cook for 2 min. per side, or until cooked through.

Serve as is, or in a hamburger bun with tomato, lettuce and ketchup.
