Valentine Stripes: Jello Cake

Jello Cake!Ok, I know this is really treading a thin line between “gourmet” and “mix it”, but this cake is delicious. Trust me. You have to try it to see. Or you could ask my husband who, as soon as I put the plate down after photographing it, gobbled up not one, not two but all FOUR pieces of cake and then proceeded to grab more from the fridge.

I`m going to be glad when Valentine`s Day is over . . . hubby is going to weigh about 50 lbs more!

Striped Jello Cake

Step One
You`ll need a basic white sheet cake. Any cake recipe will do, here`s the one I used:

2 cups sugar
1 cup (2 sticks) margarine
2 tsp. vanilla
4 eggs
2 tsp. baking powder
3 cups flour
1 1/4 cup milk

Preheat oven to 350ยบ. Grease a 9×13″ pan.

Blend the sugar and margarine together and beat in the eggs and vanilla.

Combine dry ingredients in a separate bowl and add to the sugar mixture. Beat in the milk until smooth. Pour into the pan and bake for 30-40 minutes or until a toothpick stuck in the middle of the cake comes out clean.

Step Two

Mix up a package of red Jello according to the instructions.

Take a wooden spoon and use the handle to poke holes in your cake.

Now pour the Jello over the entire cake, making sure some gets into each hole. (sorry about the blurry photo, I was pouring and shooting at the same time)

Put the entire cake in the fridge and leave it overnight to chill. Cut through the holes you poked and you`ll end up with pieces like this.

    Sheesh! Here I am reading all these awesome recipes, and suddenly I look at who is writing them! Who knew you and your sister were so creative with food (and not too shabby at photographing it either)! I am totally making this cake this weekend. It sounds yummy!

    I make this cake all the time too! I use whipped cream as frosting and shredded coconut to top it.

    For some reason my kids have named it “Clown Cake”. LOL
