Tomato Chicken
This dish goes very nicely over rice or noodles and can be made ahead of time and simply reheated when you’re ready. It’s tasty and versatile, not to mention extremely simple for those nights when you end up trying to make dinner after soccer practice and everyone is starting. It takes about 7-10 minutes to cook.
Tomato Chicken
Serves 4
2 chicken breasts, cubed
5 tomatoes, chopped
1 tsp. dried basil
4 cloves garlic, minced
oil
In a small amount of oil, over low heat, cook the garlic. Add the chicken pieces and cook on high until they start to turn white. Add the tomatoes and basil and simmer until the chicken is cooked through and the tomatoes are falling apart. Salt to taste and serve over rice.
