The Ultimate Fried Egg Sandwich

Sometimes you just want something simple . . . but no one else does. If you’ve found that a basic fried egg sandwich just doesn’t fly with the rest of the family, then you’ll like this quick and easy “gourmet” fried egg sandwich!

Ultimate Fried Egg Sandwich

Makes 2

4 slices bread (or use pieces of french bread or foccaccia)
2 medium tomatoes, sliced
1 avocado, mashed
juice of half a lime
salt
2 eggs
1/2 tsp dried oregano

Whisk eggs together with the oregano and pour into a preheated pan. Let them cook a moment, then use the spatula to lift the edges and tip the pan so the runny egg in the middle runs under the outer edges to cook.

When most of the runny egg is gone, flip the eggs and cook about 30-45 seconds or until just set. You don’t want any brown, since that will make the sandwich bitter.

Mash the avocado with a pinch of salt and a squeeze of lime or lemon. Spread on two of the bread slices. Top with the egg, then add the tomato and cap with the remaining bread.

This sandwich is really simple, but it’s very tasty and enough to convince even your husband that a sandwich is a real meal.
