<p>Mangoes are everywhere down here right now and so the other day, I decided to use them on some chicken. You could also used canned ones, but I highly recommend fresh if you have access to them. I&#8217;m actually not a huge fan of the fruit myself, but my boys and husband certainly are! Easy to tell they were born here. <img src='http://thegourmetmama.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>This is a one pot dish that is so very simple to make and it&#8217;s great over rice.</p>
<h2>Mango Chicken</h2>
<p><em>Serves 4</em></p>
<p>2-3 lbs chicken, cut into pieces<br />
1 c. chicken broth<br />
1 large mango, peeled and cut into strips<br />
1 onion, sliced</p>
<p>Saute the onion lightly in a little oil in a deep frying pan or pot. Add the chicken pieces and brown a little one each side.</p>
<p>Add the broth and mango pieces, cover the pan and let simmer until the chicken is cooked through, about 15-20 minutes, depending on the thickness of the pieces.</p>
<p>Serve over rice.</p>
