<p>If you want something quick and easy that encompasses the protein and veggie food groups, this is the dish for you. It&#8217;s delicious and easy to eat, plus the leftovers go very well in sandwiches. Actually, this dish goes with just about anything . . . add some tomato sauce and it&#8217;s great on pasta, dump it on rice, stuff it in a hunk of bread . . . this is a very versatile recipe that will literally cook up in minutes.</p>
<h2>Ground Beef Scramble</h2>
<p><em>Serves 4</em></p>
<p>1/2 lb. ground beef</p>
<p>1 tin kidney beans</p>
<p>1 green pepper, chopped</p>
<p>1 cup corn</p>
<p>1 large onion, chopped</p>
<p>1 tsp. dried oregano</p>
<p>Brown the beef in a frying pan with the onions for 5 min. Add corn, oregano and beans, as well as the green pepper. Let the mixture simmer for 10 min. stirring occasionally.</p>
<p>Serve hot with rice, or cold in a sandwich.</p>
