<p>The day after Easter and chances are you have more than a few hard boiled eggs kicking around, even discounting those that got smashed in the egg hunts. So, today, we`re going to take a look at what you can do with all those eggs!</p>
<h2><strong>Deviled Eggs</strong></h2>
<p><em>serves 6</em></p>

<p>6 boiled eggs<br />
1 Tblsp. mayonnaise<br />
1 tsp mustard</p>
<p>Slice eggs in half lengthwise. Use a spoon to gently remove the yolk. Set the whites aside.</p>
<p>In a small bowl, mash the yolks with a fork. Add mayonnaise and mustard and mix well.</p>
<p>Scoop the yolk mixture back into the egg halves. If you want it to look fancy, use an icing bag with a star tip and squeeze it into the egg in a swirl pattern.</h2>
<h2><strong>Spinach Salad</strong></h2>
<p><em>serves 6</em></p>
<p>4 c. spinach leaves<br />
6 strips bacon, fried crispy<br />
2 hard boiled eggs, chopped<br />
3 Tblsp. olive oil<br />
3 Tblsp. vinegar</p>
<p>Tear spinach into a medium salad bowl. In a bowl, beat oil and vinegar with a whisk until mixed. Pour over spinach.</p>
<p>Add bacon and eggs and toss lightly. Serve immediately.</p>
