Sweet and Sour Lemon Chicken

This is a super quick and easy dish to whip up when you get home late and still need something tasty. As long as you have the ingredients on hand you`ll be able to go from walking in the door to eating in about 10-15 min.

Sweet and Sour Lemon Chicken

Serves 4

1 chicken breast, cubed
3 T. cornstarch
1/8 c. water
2 Tblsp. lemon juice
1 tsp. sugar
3 cloves garlic, minced
1/2 tsp. salt

Toss the chicken in the cornstarch until coated. Heat a little oil in a frying pan until sizzling and add chicken.

Cook for a minute, stirring. Add garlic and cook until chicken is golden brown.

In a cup, mix remaining ingredients and pour into pan, stirring quickly so all the chicken is coated. Cook until chicken is done (test by cutting a large piece in half. No pink means it`s done) and serve with veggies and rice.
