Here in Guatemala, we have a restaurant called Pollo Campero which is like a fast food restaurant that serves fried chicken. I’m not big on fried chicken, but their breakfasts are great! One of my favorites is the huevos rancheros dish, so I decided to replicate it at home. This is a very simple dish to make and it is far better than mere scrambled eggs!

Simple Huevos Rancheros
8 corn tortillas
1 can black beans
1 c. salsa
Fry the eggs like you normally would. Meanwhile, lay the tortillas on the plates, two per person (one is fine for kids).
In a frying pan, saute the onions until translucent. Add the black beans and heat through. Add a couple spoonfuls to each tortilla, top with an egg and then spoon salsa on top. Presto! A breakfast that’s tasty and relatively healthy!Print or share this recipe using the icons above!
