Simple Huevos Rancheros

Huevos Rancheros, Eggs with Salsa

Here in Guatemala, we have a restaurant called Pollo Campero which is like a fast food restaurant that serves fried chicken. I’m not big on fried chicken, but their breakfasts are great! One of my favorites is the huevos rancheros dish, so I decided to replicate it at home. This is a very simple dish to make and it is far better than mere scrambled eggs!

If you’re looking for something that won’t take much longer than normal eggs, this is the recipe to try.

Simple Huevos Rancheros

Serves 4

8 eggs
8 corn tortillas
1 can black beans
1 onion
1 c. salsa

Fry the eggs like you normally would. Meanwhile, lay the tortillas on the plates, two per person (one is fine for kids).

In a frying pan, saute the onions until translucent. Add the black beans and heat through. Add a couple spoonfuls to each tortilla, top with an egg and then spoon salsa on top. Presto! A breakfast that’s tasty and relatively healthy!

  • Thanks for that. I moved to England when I was really young, and I really want to rediscover my heritage. I’ve been trying out a lot of random mexican recipes, and the best I’ve found yet is this taco recipe – it totally remind me of my childhood. I dont remember much of it except for the lovely smells and delicious food on every street.

  • I’m so worried about the way our children are headed in nowadays. Watching Jamie Olivers food revolution tv show scared the thingies out of me. I suggest we all start cooking some healthy recipe like these at home if we’re going to fix this horrible situation. The ones on that site seem pretty easy, I tried last night and it’s the first time my family has eaten healthy in ages, I just feel great.
