Shukos (Chorizo Sandwich)
In Guatemala, shukos are a common street food that you’ll find just about anywhere. They’re incredibly delicious, but don’t eat them while you’re on a diet! The other day my husband asked if I could make some for him and so I gave it a whirl . . . and got two thumbs up from him. If you want to make these at home, here’s how.
Shukos
Serves 4
4 white bread rolls
4 chorizos, chopped
1 c. cabbage, finely chopped
1/4 c. mayonnaise
1 avocado, mashed
ketchup
mustard
mayonnaise
Toast the bread lightly. Saute the chorizo bits until just cooked.
In a bowl, mix the mayonnaise and cabbage.
To assemble the sandwich, spread both sides of the bread with avocado. Slather on some cabbage mixture, add a quarter of the chorizo pieces and top with ketchup, mustard and mayonnaise.
Like I said, not diet food!!
