Rapid Chorizo Hash

If you’re looking for something a little different than the usual meat dish, then this is the perfect way to go. Now, there are a number of different chorizos on the market and while this recipe will work with most of them, the best ones are truly red. I used Toledo brand.

Chorizo Hash

makes 4 servings

8 chorizos
1 medium onion, chopped
1/2 red pepper, chopped
1 tsp. garlic powder
1 tsp. dry oregano

In a frying pan, heat some oil and add onions. Saute until transluscent.

In the meantime, split the casings on the chorizos and empty out the filling. Add to the onions and toss in remaining ingredients.

Cook over medium heat for approximately 5 min. Use your spatula to break up the chorizo until it resembles hamburger as you cook.

Serve hot with bread and salad for a quick and easy meal.
