Quick and Easy Mango Chicken

Mangoes are everywhere down here right now and so the other day, I decided to use them on some chicken. You could also used canned ones, but I highly recommend fresh if you have access to them. I’m actually not a huge fan of the fruit myself, but my boys and husband certainly are! Easy to tell they were born here. :)

This is a one pot dish that is so very simple to make and it’s great over rice.

Mango Chicken

Serves 4

2-3 lbs chicken, cut into pieces
1 c. chicken broth
1 large mango, peeled and cut into strips
1 onion, sliced

Saute the onion lightly in a little oil in a deep frying pan or pot. Add the chicken pieces and brown a little one each side.

Add the broth and mango pieces, cover the pan and let simmer until the chicken is cooked through, about 15-20 minutes, depending on the thickness of the pieces.

Serve over rice.
