Purple Cabbage Salad

This very simple salad recipe is great if you’re someone who isn’t into slaws. It has the crunch of the cabbage, rather than the squishy feel of coleslaw and the purple cabbage makes for a softer taste. Unlike regular cabbage, this stuff doesn’t give you that acidic bite . . . something my kids really appreciated. Not to mention, it’s purple! Who doesn’t love purple food?

Purple Cabbage Salad

Serves 4

1/2 purple cabbage, sliced thinly
2 Tblsp. mayonnaise
1 tsp. mustard

Mix the mustard and mayo together, then toss with the cabbage until the cabbage is coated. Serve fresh for the best crunch!
