Potato-Corn Pie: The Perfect Side Dish

This is an excellent side dish that is at once homey and gourmet, and it`s a fun way to use up leftover mashed potatoes. I highly recommend it.
Potato-Corn Pie
2 cups of mashed potatoes (real potatoes work best, with butter and milk)
2 cups corn, raw or canned (drain if canned)
1/2 c. butter (1 stick)
1 medium onion, chopped
Preheat oven to 350ยบ.
Spread mashed potatoes in a 9×9″ pan.
In a frying pan, melt butter. Saute onions for 1 minute, then add corn. Cook for 2 minutes.
Blend the corn mixture in a blender until creamy and pour over the potatoes. Bake for 20 min. or until the top is set. Goes very well with chicken.
