This is an excellent side dish that is at once homey and gourmet, and it`s a fun way to use up leftover mashed potatoes. I highly recommend it.
2 cups of mashed potatoes (real potatoes work best, with butter and milk)
2 cups corn, raw or canned (drain if canned)
1/2 c. butter (1 stick)
1 medium onion, chopped
Preheat oven to 350º.
Spread mashed potatoes in a 9×9″ pan.
In a frying pan, melt butter. Saute onions for 1 minute, then add corn. Cook for 2 minutes.
Blend the corn mixture in a blender until creamy and pour over the potatoes. Bake for 20 min. or until the top is set. Goes very well with chicken.Print or share this recipe using the icons above!
