Poached Eggs with Salsa
This is a quick and easy breakfast that has become a staple in this house. It’s packed with protein and gives you a nice boost without loading up on calories. Oh, and it’s delicious, too!
Poached Eggs with Salsa
Serves 1
2 eggs
2 Tblsp. salsa or pasta sauce
1 flour tortilla, 6″
1 slice soy cheese (or any cheese you like), cut in half
Basil
Salt
Bring water in a small pan to a boil and add salt to taste. Crack eggs into the boiling water and cook until the yolk is done to your preference.
Meanwhile, lay a tortilla on a plate and spread the salsa over it. Add the two slices of cheese.
Use a slotted spatula to life and drain the eggs. Place atop the cheese and sprinkle with basil to serve.
