Papas Doradas, a Latino Staple

Any time there is a special family event, you`re quite likely to find papas doradas or Golden Potatoes served here in Guatemala. These are soooo delicious. Totally not healthy, but you can say it`s ethnic cuisine and get away with it.
These yummy potatoes go perfectly with steak and a salad.
Papas Doradas
serves 6
10-15 small potatoes, peeled
1/2 cup vegetable oil
3 Tblsp. salt
Boil the potatoes in enough water to cover. Once the water is boiling, add salt.
When the potatoes are just soft enough to stab with a fork, drain and set aside.
In a large saucepan, heat the oil for two minutes over medium heat. Add potatoes (careful, the oil tends to spit if the potatoes are still wet) and cook until golden on one side. Flip and let brown on the other.
Drain on paper towel and serve hot.
