No-Bake Applesauce Pie: The Perfect Summer Dessert

Apple pies are yummy, but when it’s super hot out like it has been lately, baking is probably the LAST thing you want to do. That doesn’t mean you can’t enjoy apple pie, though . . . you just need a new recipe.

This pie was born out of a bag of apples destined to become an apple cake. Unfortunately, it has been so warm lately that I just never felt like baking a cake, so the apples were starting to look pretty unhappy. Finally, they got turned into this quick and easy pie that was gone before dinner!

No-Bake Applesauce Pie

makes 1 9″ pie

Pie Filling
3 c. apples, peeled, cored and chopped
juice of 1 lemon (about 1 Tblsp.)
1 c. sugar (reduce if your apples are sweet)
1/2 c. plus 3 Tblsp. water
1 tsp. vanilla
1 Tblsp. cinnamon
3 Tblsp. cornstarch

Pie Crust
1.5 c. cookie crumbs (put cookies in a ziplock bag and crush with rolling pin or use your food processor)
1/4 c. sugar
1/4 c. melted margarine

Mix pie crust ingredients and press into a 9? pie pan. Put in the freezer while you prepare the filling.

Mix apples, lemon juice, 1/2 c. water, cinnamon, vanilla and sugar in a pot and bring to a boil. Reduce heat and let simmer for 30 min. or until the apples are soft. Keep an eye on it, since the applesauce will tend to burn if not stirred often.

In a small cup, whisk remaining water and cornstarch. Stir into the applesauce and heat for 2 minutes more.

Spread applesauce into the pie shell and chill for 2 or more hours. Serve cold. Ice cream would be heavenly with this dessert!

      Any vanilla cookie will do just fine, as long as it has no icing. :) Galletas Maria or graham crackers work particularly well, but you can certainly use something different.
