Who doesn’t love peanut butter cookies? These ones are not that peanut buttery, so they are ideal if you enjoy just the flavor but don’t want the stick-to-the-roof-of-your-mouth sensation. My kids pretty much got rid of these by the end of the day!
Mild Peanut Butter Cookies
Makes about 18 cookies
1 c. sugar
1/2 c. (1 stick) margarine
1/2 c. peanut butter
1 tsp. vanilla
1 1/4 c. flour
1 tsp. baking powder
Preheat oven to 350º.
In a bowl, beat the sugar and butter until smooth. Add the egg, vanilla and peanut butter and stir well.
Add remaining ingredients and beat until smooth. Form 1″ balls and place on a greased cookie sheet. Use a fork to flatten and add the criss-cross pattern.
Bake cookies for 15 minutes. Cool on a rack. Careful, they can be a bit crumbly until they’ve cooled . . . but that just gives you an excuse to eat any that break!
