Make Your Own Pesto Sauce

Pesto is sooooo easy to make that there`s really no excuse for buying it at the store. All you need is a handful of simple ingredients and a good blender to whip up your own in minutes . . . and you can freeze it for later.
Though the recipe below makes about 2 cups, you can easily multiply it to make as much as you want . . . this is a great way to use up extra basil.
Pesto Sauce
Makes 2 cups
1/2 c. pine nuts
2 c. basil leaves
1 c. olive oil
2 cloves garlic (more if you like it garlickly!)
1 tsp salt
Blend all ingredients in a blender until smooth. Add more salt if desired.
Pesto can be mixed with Parmesan cheese right before serving, though it`s tasty all on its own, too!
Toss with pasta, marinate chicken in it or use it as a pizza topping. Pesto is a delightful and very versatile dish. Stay tuned for more ways to use your pesto, as well as more recipes for basil in the coming weeks.
