Lemon Chicken Pasta
This dish was one that I made for a mom’s group the other day and it was very well received. It’s fairly cheap to make and is extremely tasty, making this an excellent dish to whip up to impress people on short notice!
Lemon Chicken Pasta
Serves 4
1 lb. spaghetti
3 Tblsp. olive oil
4 cloves garlic, minced
1/2 red pepper, chopped
juice of two lemons (about 3-4 Tblsp.)
1 lb. chicken breast
salt
Sprinkle the chicken breast with salt and saute in a frying pan while the pasta cooks.
When the chicken is cooked through, remove and set aside to rest. In the same pan, add the olive oil, garlic and red pepper and saute until the garlic is soft.
Drain pasta and toss with the garlic and red pepper, as well as the oil and lemon juice. Top with slices of chicken breast and serve. This goes very well with garlic basil focaccia! Recipe coming shortly for that.
