Lava Coffee Cake

If you’re looking for a super fast and really delicious recipe for breakfast, this coffee cake definitely does the trick. It’s soooo delicious! With cinnamon and sugar melting into the cake, this could well be the best breakfast around. I highly recommend it for visitors.

Lava Coffee Cake

Makes 9 squares

1 c. flour
1/4 tsp salt
3/4 c. brown sugar
1/3 c. shortening
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
2/3 c. milk
2 eggs, beaten

Topping
1/2 c. butter
1 Tblsp. cinnamon
3 Tblsp. sugar

Preheat oven to 350°.

Mix flour, salt, brown sugar and shortening. Add baking powder, baking soda, cinnamon and nutmeg to the remaining mixture.

In a separate small bowl, mix topping ingredients until crumbly.

Blend in eggs and milk. Pour into a 9″ square cake pan and sprinkle with the topping mixture.

Best served hot, with the topping melting into the batter still. Enjoy!
