How to Make Butter Mints

Butter mints
Making your own candy usually involves thermometers and sticky messes. Not these mints. They`re so easy, your kids can help you make them.

These don`t need to be just for V-day by any means . . . as you can see, they are super cute for a baby shower gift and you could even make them for a wedding or other event.

Simple Butter Mints

1/2 cup butter, very soft

3 cups (just over one bag) icing sugar, sifted

2 tsp peppermint extract (you can also use other flavors, mine were almond flavored)

2 Tblsp milk

Gel paste food colors

Extra icing sugar

Use an electric mixer to beat the butter for 3 minutes, then gradually add 2 cups of icing sugar. Pour in extract and milk. Beat until smooth, add remaining icing sugar.

Sprinkle a flexible cutting board with icing sugar and dump the ball of mint dough onto it. Knead a few times to be sure it`s nice and smooth. Divide into 3-4 portions, depending on the number of colors you wish to use.

Add a little food coloring to each quantity and knead until the color is spread throughout evenly. If the dough is sticky, just add a bit more icing sugar.

Roll your dough out to about 1/4″ thick, if you are going to cut it into shapes. You can cut them out with tiny cookie cutters (I used bento cutters) or simply roll them into small balls. For pillow mints, roll out a long snake, about 1/2″ thick and cut into 1/2″ lengths with a butter knife.

Leave in the fridge overnight. The longer these mints sit, the more they dry out and thus the harder they become. They do tend to fall apart if handled too much by warm hands, however, so take care.
