Hearty Breakfast Oatmeal

My husband and eldest son are NOT fans of oatmeal. They would rather not eat than enjoy a bowl of piping hot cereal. But, I finally found a way they will eat this healthy whole grain . . . baked!

Baked oatmeal tastes a lot like oatmeal cookies, which means my toddlers love it and so does my picky husband!

Baked Oatmeal

3 cups of oatmeal, whole oats, not quick
1 cup sugar
2 tsp. cinnamon
2 tsp. baking powder
1 cup milk
dash of salt
2 eggs
1/2 cup (1 stick) margarine
1/2 cup soaked raisins

Preheat oven to 350ยบ. Mix dry ingredients in one bowl.

In another bowl, beat eggs, melted butter and milk together. Pour over oat mixture and stir together. Stir in raisins and spread in a 9×13″ pan.

Bake for 30-35 minutes or until cooked through. Serve with milk.
