Guilt-Free Chocolate Biscuits

I`m on a diet at the moment and one of the things I miss most is chocolate. This recipe is something I came up with the other day and it gets you that rich chocolate flavor without the calories. Or, at least it does until you add the icing and squish it between two cookies . . . then all bets are off.

Each of these yummy biscuits is just 80 calories, according to the SparkPeople recipe calculator. Again, two cookies with icing, as shown in the photo, is going to be considerably more! Still, these are perfect to have with tea or coffee since they aren`t really sweet at all, but totally deliver the choco-pow.

Chocolate Biscuits

Makes 24 2″ biscuits

4 Tblsp. margarine
1/2 c. cocoa powder
1/4 c. milk
1 tsp. vanilla
1/2 c. water
2 Tblsp. sugar
1 egg
3 tsp. baking powder

Preheat oven to 350ยบ.

Blend margarine, sugar and cocoa powder together. Add milk, egg and water. Stir in vanilla.

In a separate bowl, mix flour, salt and baking powder. Beat this into the liquid mixture.

Roll out to 1/4 inch and cut into 2″ rounds. Bake for 15 min.
