Grilled Chimichurri Chicken
Chimichurri is a tasty herbal paste that you can add to just about anything, but it is particularly tasty on chicken. Since we’re in full on grill mode these days with the heat, I’ve been making grilled chicken, beef and even kabobs with this stuff and it is YUMMY! You can buy ready made chimichurri, or stay tuned for an upcoming Gourmet Mama recipe.
Grilled Chimichurri Chicken
serves 4
1 large chicken breast, cut into thinner pieces
1/2 c. chimichurri sauce
salt
Put the chicken in a bowl and add the chimichurri. Mix well with your hands until the chicken is completely coated. Let sit for 15 minutes while you fire up the grill.
Heat the grill to medium hot. Place your chicken on the grill and cook for 7-10 minutes, or until the edges turn white. Sprinkle with salt to taste. Flip the meat.
Cook until done, about another 10 minutes, checking by pressing down on the meat from time to time. If it gives easily, it’s still raw in the middle. If your finger barely indents, you can check the inside to be sure it’s done.
Serve with whatever sides you like or on a piece of bread with tomatoes and lettuce for a very tasty sandwich.
