Green Mango Salad

This salad was a feature at a recent picnic we had with friends and it went over very well. The tartness of the green mango is offset by the sweetness of the carrots and the dressing picks out alternating zings of sweet and salty with a little sour thrown in. It’s really an amazing salad that brings your entire mouth to alertness and well worth making for friends.

Green mangoes are merely unripe mangoes. You’ll want to avoid cutting the central pit, which is still soft when they are this green, but not edible. If you can’t find them in your supermarket, head to the Chinese grocer.

Green Mango Salad

serves 6

2 Tblsp. sugar

2 Tblsp. soy sauce

1 Tblsp. lemon juice

1 c. shredded carrot

3 c. shredded green mango

Toss all ingredients together and serve. It’s really that simple. If the salad sits for a while, toss again to make sure it is thoroughly coated with the dressing before serving.
