Ginger Spice Cookies

I am particularly fond of ginger. From the time I was little and was given ginger ale to settle my stomach when ill, I liked it. The spiciness of this root adds a zip to any recipe that it is added to and it is truly delicious in so many ways!

My boys were begging for cookies the other day, I had to take a snack to a friend’s house and so I decided to come up with some sort of ginger cookie. Now originally, I was planning to make some thing, crispy cookies, but they didn’t come out right. Regardless, the result was heavenly . . . even my non-cookie fan husband ate about a dozen!

Ginger Spice Cookies

Makes 2.5 dozen

1 1/2 c. sugar
1/2 c. margarine, softened
2 eggs
2 c. flour
2 tsp. ginger
1 tsp. cinnamon
1 tsp. baking powder
1/4 c. milk

Preheat the oven to 350ยบ.

In a bowl, cream sugar and margarine until well mixed. Blend in eggs and milk. Now add flour, baking powder, cinnamon and ginger to the mixture and stir until mixed.

Drop cookie dough by the spoonful onto a greased cookie sheet, about 2″ apart. Bake for 10-15 min. or until browned.
