Get Well Chicken Soup

This soup is so good for you, with homemade chicken broth, ginger, garlic and herbs, yet so very easy to make. Even if you consider yourself a dismal cook, you’ll be able to pull this one off!
With kids back in school and winter coming, it’s the perfect time to start whipping up some yummy chicken soup for those inevitable sick days. Make a double batch and freeze half so you have a quick and easy dinner one night.
Get Well Chicken Soup
makes 6-8 servings
1/2 chicken, remove skin, cut into four parts
1 large carrot, slivered
3 potatoes, cubed
2 onions, chopped
3 ribs celery, chopped
1 T. fresh parsley
5-8 sprigs fresh thyme tied together with a string
1 ” fresh ginger, minced
1 tsp. dried oregano
4 cloves garlic, sliced
6 c. water
In a large soup pot, heat a little oil. Add onions and celery and saute until onions are transluscent. Add chicken and brown on both sides, about 2 min. per side.
Add garlic and stir. Pour in the water and add remaining ingredients. Cover and simmer for 1 hour. Check the chicken at this point to see if it is finished, the meat should be white all the way through. Salt and pepper the soup to taste and remove the bundle of thyme.
You can serve the soup like this, but what I do is remove the chicken and cool a little, then tear it into small strips and add back into the soup. This prevents any arguements over who gets which piece and also means that your husband will eat the leftovers because there is still chicken in the soup.
