Chunky gazpacho
I`ve come across a lot of recipes for gazpacho over the years, but for a busy mom, simpler is better and this recipe really is very simple. Even better, it`s a dish that everyone in my family loves and the kids adore dipping chunks of fresh bread into the broth and eating it up.

You might find that most gazpacho recipes call for blending, but around here, we like to eat our tomatoes and cukes in chunks.

Not only is this a fancy looking soup to serve, it`s super healthy and low in calories so you really can`t lose!

Chunky Gazpacho
Makes approx. 6 servings

3 c. chilled beef broth (vegetable if your vegetarian)
1/2 c. lime or lemon juice
1 small onion, minced
2 garlic cloves, minced
4 tomatoes, diced
1 medium cucumber, diced
1/2 c. fresh parsley, minced
1 red bell pepper, diced

Mix all ingredients and serve with bread for dipping. It can also be left in the fridge for a day, but keep in mind that the garlic flavor gets stronger the longer it sits!

Don`t worry too much about the amount of the ingredients . . . if you only have half a cucumber, that`s fine. I often vary the amounts according to what I have on hand.
