Fried Green Tomatoes
Have you ever seen the movie Fried Green Tomatoes? When I saw it many years ago, I wrinkled my nose at the idea of eating green tomatoes. Nevermind that I had them in my mom’s mincemeat all the time, they sounded gross!
Fast forward 15 years and I have started growing my own tomatoes. The other day, we found a rogue plant just full of fat green tomatoes and the first thing that popped into my head was that movie! So we made fried green tomatoes for lunch and guess what? They were delicious! They aren’t tart at all and have a nice gentle tomato taste. Perfect for when you can’t wait for your tomatoes to ripen.
Fried Green Tomatoes
Serves 4
4-6 green tomatoes (they should be nice and plump, just not red yet)
1 c. flour
1 Tblsp. chicken consomme powder
1 egg, beaten
1/4 c. oil
Mix the flour and consomme together.
Heat the oil in a large frying pan.
Slice tomatoes crosswise, into 1/8″ slices. Coat in egg, then in flour. Drop the tomato slices into the hot oil carefully and let cook until golden brown on one side, about one minute. Flip and cook until brown on the other side. Drain on a paper towel.
Note: The flour that comes off the tomatoes WILL burn in the pan. So, if you are doing multiple batches, make sure you wipe the pan clean each time or your tomatoes will be coated in tiny burnt particles that do not taste good at all.
