Creamy Herbed Spaghetti Sauce with Dr. Seuss pasta

Looking for something that will thrill the kids and adults alike? This fun pasta is surprisingly delicious! If you prefer, skip the food coloring and just serve the sauce over regular pasta.

This is another winnnig recipe from my sister Rebekah! That girl practically needs her own bio by now.

Creamy Herbed Spaghetti Sauce with Dr. Seuss Pasta

Serves 6

3 tomatoes, diced into ½ inch cubes

2 c. thickly chopped mushrooms

1 c. sliced onion

1 can () ground tomatoes

½ c. cilantro, chopped

½ c. parsley, chopped

¼ c. rosemary, chopped

½ c. cream cheese

½ c. milk

1 T. sugar

6 c. cooked pasta ( in this case dyed green with blue food colouring for the Dr. Seuss part)

Fry mushrooms, onions and fresh tomatoes in butter. While that’s cooking, simmer ground tomatoes and herbs in a saucepan. Mix the two. Add the milk and small bits of cream cheese. Put in the sugar to cut the acidity of the tomatoes. Serve with garlic bread and Caesar salad
