Corn Zucchini Stir Fry
I love zucchini. My son loves corn. This stir fry came into existence simply because I had an overabundance of both these fine vegetables in my fridge and had to use them up before they went bad. I always seem to overbuy when I see something luscious!
This is the perfect accompaniment to chicken or beef, or just add some meat right into the recipe and you have yourself a one-pot meal!
Corn Zucchini Stir Fry
Serves 6
4 c. zucchini, chopped
2 c. corn
1 onion, chopped
1 Tblsp. paprika
1/4 c. chicken broth (use vegetable broth for vegetarian or vegan dish)
salt
Saute the onion until translucent. Add zucchini and cook for one minute. Add the corn and broth and let simmer until the zucchini is tender. Salt to taste and stir in paprika. Serve with rice.
