Coffee Cake in a Mug
I recently discovered mug cakes and I’m addicted. It all started with the usual chocolate cake in a mug (recipe coming soon), but then one morning, the boys wanted breakfast and it was already too hot to bake and the baby was fussing . . . and it came to me, bam! Make a coffee cake in a mug, inspired by this recipe. Perfect, right?
Well, it WAS perfect. Delicious, coffee cakey and it was just the right amount for two little boys and myself to have for breakfast. It would normally be enough for two adults. So, if you’re looking for a good way to make breakfast FAST without turning on the stove or the oven, this is the perfect way to do it.
Coffee Cake in a Mug
serves 2
1/2 c. flour
1 egg
1/2 tsp. baking powder
2 Tblsp. margarine
4 Tblsp. sugar
4 Tblsp. sour cream
4 drops vanilla extract
1/2 tsp. cinnamon
Topping:
1 tsp. cinnamon
2 Tblsp. flour
1 Tblsp. butter
1 Tblsp. sugar
Soften the butter for 5-8 seconds in the microwave. Stir in the sugar until well mixed and then beat in the egg until smooth with a fork.
Stir in the sour cream and vanilla.
Add the flour, baking powder and cinnamon and mix well. Divide between two coffee cups.
In a small bowl, mix the topping ingredients with your fingers, rubbing to make little crumbs. Sprinkle evenly over the two cups of batter.
In the microwave, cook one cup at a time for about 1 minute 25 seconds. You may need to adjust the time, depending on your microwave. I found that when the cake looked done on top, you need to do another 10 seconds or it will have raw batter around the bottom.
Serve! Eat right out of the cup or tip it out and eat it on a plate.
