Coconut Curry Prawns!
This is the type of dish that is super easy to make but will make your guests think that you slaved away in the kitchen for hours to bring them a great gourmet dish! You can serve it on its own as an appetizer or over white rice as a main dish! This recipe is for one serving but you can multiply it to suit how many people you are feeding.
Coconut Curry Prawns
Makes 1 serving
6 jumbo prawns, peeled with tails left on
1/2 c. coconut milk
1/2 tsp. green curry paste
In a small pan, heat the coconut milk over a medium high heat and stir in the curry paste. When the liquid is bubbling, add the prawns and cook for 1-2 minutes or until they are firm when you press on them. Serve as is or on a bed of white rice.
