Cinnamon Coffee Cake Whips Up Fast

Making up a hot breakfast can be a real challenge for busy moms with hungry families. That`s why I usually turn to something that requires minimal attention, like coffee cake. It`s fast to whip up and while it`s in the oven you can be looking for lost shoes, making beds and packing lunches.
This cinnamon coffee cake is a bit different from the usual crumbled topping affair. It`s healthy (using whole wheat flour and minimal sugar) but the drizzle of spiced icing creates kid appeal.
Cinnamon Coffee Cake
Cake
1 1/2 cups flour
2 tsp baking powder
1/2 cup sugar
1/2 cup milk
1 egg
1/2 cup melted margarine
1/2 cup raisins
1 tsp vanilla extract
pinch of salt
Icing
1 cup icing sugar
2 tsp cinnamon
1 Tblsp water
Preheat oven to 350ยบ.
In a mixing bowl, stir together all dry ingredients and add raisins. Beat together egg, milk, vanilla and melted butter in a separate bowl.
Pour egg mixture into the dry ingredients and stir until well mixed. Spread in a greased 8×8″ pan and bake for 15 minutes or until a toothpick inserted in the middle comes out clean.
Whisk the icing ingredients together and drizzle over the warm coffee cake. Serve hot.
