Chunky Vegetable Soup with Chorizo

We`re always looking for ways to add more vegetables to our diet without getting too boring. While salads are a fun way to get your greens, if you want a lot of vegetables all at once and still make something your husband will eat, this is the soup (practically a stew!) to make.
This can easily be turned vegetarian by substituting vegetable consommé for the beef and omitting the chorizos.
Chunky Vegetable Soup with Chorizo
Serves 4
3 chorizos, sliced
1 large carrot, chopped
2 c. potatoes, chopped
1 c. baby acorn squash, chopped (substitute zucchini if you can`t find squash)
1 c. tomato, chopped
2 onions, sliced
4 c. beef broth
2 tsp. dried oregano
Fry the onions until translucent in a small amount of oil in a pot. Pour in beef broth and toss in remaining ingredients. Simmer for 30 min. or until the potatoes are tender.

Wow the soup looks so much like the Beef and Vegetable I make. This looks so good I could run get my spoon and eat through the screen! I cannot have Chorizo due to the fat content so I use very lean beef and add spices to it. You have a wonderful site here and I will return often. Thank You!
