Christmas Pinwheel Cookies

I always see chocolate and white pinwheel cookies and have frequently thought that they should be red and green for Christmas. So, these cute peppermint flavored cookies are perfect for whipping up during the holidays. And, if you want to get a two for one thing going, use the same dough to make candy cane cookies, too!

Christmas Pinwheel Cookies

Makes 32 cookies

2 c. flour

1 tsp. baking powder

1/2 c. margarine, room temp

1 c. sugar

1 large egg

1 tsp. peppermint extract

red and green food coloring

Preheat the oven to 350ยบ.

In a bowl, mix the salt, flour and baking powder together and set aside.

Cream the butter and sugar together until fluffy, then add egg and extract. Beat until smooth and gradually add the flour mixture until completely mixed.

Divide the dough in half. Color one half red and the other half green. I find that gel colors work best for stronger colors.

Divide each color in half. Take one chunk of green and roll it out into a rectangle. You can use a book or ruler to help straighten the edges. Do the same, separately, with a chunk of red dough.

Lay the red sheet on top of the green and roll up into a log. Now use a sharp knife to cut the log into 8 slices. Lay the slices on a greased cookie sheet, at least an inch apart and bake for 8-10 min. or until just golden around the edges.

Cool on a rack. The cookies will be very soft, but firm up as they cool.
