Chocolate Mint Biscotti

Chocolate biscotti is awesome all on its own, but add in a hint of mint and you have a match made in heaven. These tasty cookies are just the right crunch for dipping in coffee and I highly recommend them as a gift! In fact, with Valentine’s Day just around the corner, why not whip up a batch for your favorite someone? If you’ve always thought biscotti was too hard to make, trust me, it’s not!

Chocolate Mint Biscotti

Makes 20 biscotti

2 c. all-purpose flour
1/2 c. cocoa
1 1/2 tsp. baking powder
1/2 tsp. baking soda
2/3 c. sugar
3 tbsp. butter, softened
2 eggs
1/2 tsp. peppermint extract

Preheat the oven to 350ยบ.
Mix dry ingredients.
In a separate bowl, beat the sugar and butter until creamy. Beat in the eggs and peppermint. Add the dry ingredients and stir until well mixed.

Divide the dough in half and form two logs on a greased cookie sheet. Bake until done, about 25 minutes.

Remove from the oven and cut on the diagonal, you should get about 10-12 3/4″ slices from each log . . . I suggest munching on the end pieces for quality control. Lay the remaining pieces flat on the cookie sheet and bake for another 10-15 minutes or until crunchy. Sprinkle with icing sugar and serve.
