Chicken Soup for Invalids
With my son freshly out of the hospital and on a bland diet, I had to come up with some foods to make him. Well, he made it easy on me, asking for “Soup with chicken” every single day. Here’s the soup that I made for him . . . . simple, nutritious and very delicious.
Chicken Soup for Invalids
serves 6
6 c. chicken broth
1 onion, chopped finely
2 carrots, chopped
2 c. potatoes, chopped
2 chicken breasts, cut into pieces
1/2 c. green beans, cut into tiny pieces
1/2 tsp. garlic powder
1 tsp. dried basil
In the soup pot, first use a little spray oil and add the onions and chicken. Saute for 2 minutes.
Add the broth and remaining vegetables. Cook until the potatoes are tender, about 30 minutes, stir in the herbs and serve. Goes well with a chunk of bread!
