Cheaters Chicken Noodle Soup

There is nothing better than a hot bowl of chicken noodle soup when you or a loved one is feeling under the weather, but who has time to make it from scratch and who really wants the canned stuff thats all full of chemicals? There is another way to have a great pot of chicken noodle soup simmering on the stove in less than 20 minutes and everyone will think that you have been slaving over a hot stove all day long!

Cheaters Chicken Noodle Soup

2 cartons of chicken soup broth

1 deli pre-roasted chicken

2 cups uncooked pasta…I used fusilli but you can really use whatever type you prefer.

2 cloves of garlic (more if your a garlic lover)

Dab of butter

Pinch of salt

3 cups of veggies of your choice…Normally, I chop up carrots and celery and add some frozen peas in there, but it really depends on personal preference and of course, the pickiness of whoever you are making the soup for. For example, the batch of soup I made in the pictures is for someone who will not eat vegetables except for corn and mushrooms. No, its not for my picky child…its for a 38 year old friend of mine… :)   However, the result was an incredibly tasty pot of soup with a combination of veggies that I would never have thought of!

Step 1. Pour all of the broth into a large pot, add the salt and bring to a rolling boil. When the broth is boiling, add the pasta and stir every once in a while to keep from clumping.

Step 2. While the pasta is cooking, put the butter and chopped garlic into a pan and saute until it starts to turn brown. Add all of the veggies and cook together until they reach your desired softness.

Step 3. Cut the meat and skin from the cooked chicken and chop or shred into bitesized pieces. Add to the veggies and stir in well.

Step 4. Add the veggies and chicken to the pasta and broth and stir together.

Step 5. Serve…yup…that is literally all there is to it!
