Coconut Curry Prawns
Ingredients
6 jumbo prawns, peeled with tails left on
1/2 cup coconut milk
1/2 teaspoon green curry paste
In a small pan, heat the coconut milk over a medium high heat and stir in the curry paste. When the liquid is bubbling, add the prawns and cook for 1-2 minutes or until they are firm when you press on them. Serve as is or on a bed of white rice.
