Beef in Roasted Pepper Garlic Sauce
Sometimes the simplest dishes are the most delicious. This particular one doesn’t require a lot of work, especially if you buy your peppers roasted already. Prepare it ahead of time and let the beef marinate for a few hours or overnight to really pick up the smoky flavor and the tang of the garlic.
Beef in Roasted Pepper Garlic Sauce
serves 4
1 lb. beef, cut into strips
3 Tblsp. oil
3 roasted peppers
3 cloves garlic, minced
Salt to taste
In a blender, blend the garlic and roasted peppers with the oil until they’re pureed. Pour over the beef and refrigerate for 4-12 hours.
Heat a frying pan over medium heat and add the beef, along with the marinade. Simmer for 10-15 minutes or until the meat is cooked through. Salt to taste and serve over rice or potatoes.
