Beef and Peppers Stir Fry
There are nights around here when we need something really quick and there just aren’t many ingredients in the fridge. This beef and peppers stir fry is super fast to cook up and it has very few ingredients. You could add broccoli, onions or other veggies if you like, but it stands alone very well. Serve with bread or atop rice for a more filling meal.
Beef and Peppers Stir Fry
serves 4
1 lb beef, cut into strips
2 red peppers, cut into strips
1 Tblsp. garlic powder
1 c. chard or spinach, chopped
2 carrots, cut into matchsticks
1/2 c. green beans, cut into 2″ strips and halved
salt to taste
In a large frying pan, saute the meat until nearly cooked through, about 5 minutes. Add the carrots, green beans and peppers and cook until tender, about another 5-7 minutes. Add the garlic powder and chard, remove from heat as soon as the chard begins to wilt. Salt to taste and serve.
