Baked Halloween Pumpkin Pancake Bites
Looking for a quick and easy Halloween breakfast idea? These baked pancake bites are perfect. They’re very quick to whip up and there’s none of that standing over the stove, trying to get pancakes done fast enough for all those hungry mouths. I’m in love with baked pancakes and these mini Halloween themed pancakes are just right for a holiday breakfast. Oh, and to make them even more seasonal, I’ve added pumpkin, so they’re healthy, too!
Baked Pumpkin Pancake Bites
Makes 3 dozen (I actually did two large pancakes and a dozen bites)
2 eggs
1/4 c. butter, melted
2/3 c. pumpkin puree
1 c. milk
2 c. flour (I used 1 c. white, 1 c. whole wheat)
1/2 tsp. each cloves, nutmeg
1 tsp. cinnamon
1 tsp. salt
4 tsp. baking powder
2 Tblsp. sugar
Halloween sprinkles (we liked the multi-colored balls best)
Preheat the oven to 350°.
Mix the eggs, puree and butter together. Beat in the milk and sugar. Add the flour, spices and baking powder and mix well. Dump one large spoonful into greased muffin tins. Sprinkle with Halloween sprinkles and bake for 5-7 minutes or until just firm to the touch.
These can be served with syrup, but truthfully, my kids ate them just like this. They’re the perfect size for grabbing . . . even my 8 month old ate a couple!
