Things to Do With Hard Boiled Eggs

The day after Easter and chances are you have more than a few hard boiled eggs kicking around, even discounting those that got smashed in the egg hunts. So, today, we`re going to take a look at what you can do with all those eggs!

Deviled Eggs

serves 6

6 boiled eggs
1 Tblsp. mayonnaise
1 tsp mustard

Slice eggs in half lengthwise. Use a spoon to gently remove the yolk. Set the whites aside.

In a small bowl, mash the yolks with a fork. Add mayonnaise and mustard and mix well.

Scoop the yolk mixture back into the egg halves. If you want it to look fancy, use an icing bag with a star tip and squeeze it into the egg in a swirl pattern.

Spinach Salad

serves 6

4 c. spinach leaves
6 strips bacon, fried crispy
2 hard boiled eggs, chopped
3 Tblsp. olive oil
3 Tblsp. vinegar

Tear spinach into a medium salad bowl. In a bowl, beat oil and vinegar with a whisk until mixed. Pour over spinach.

Add bacon and eggs and toss lightly. Serve immediately.
